A floral top note before citrus and stone fruit plus ginger on the nose while the palate shows lovely fruit expression, moderate acidity and just a touch of phenolic grip. 'I believe wine’making’ can become obsolete when your vineyards are balanced within their own terroir and they express their site authentically with purity in the grapes, that way it becomes much more a ‘Guidance’ process in the cellar for me, rather than a ‘Making’ process. Being gentle and having patience unlocks a very special terroir purity for me. The vineyards have done all the challenging work already and posses their own uniqueness, the winemaking should just curate the best of that into your glass.' – Bernhard Bredell

Scion = In plant biology refers to the top part of a plant/vine that exists above the ground. We say 'The Scion cultivar of that vine is Chenin blanc and the rootstock cultivar is Richter 99'. In old English literature the word 'Scion' also refers to 'the descendant of…'. Making it applicable to refer to myself as a 'scion' from Sinai Hill as well as the vines. Plural 'Scions'.

Sinai = Referring to Sinai Hill, not the famous biblical mountain, but the folk name for the foothill in the lower Helderberg region of Stellenbosch where the Bredell’s have farmed with old dryland bushvines for many generations. Luckily some of them are still rooted and a great part of them owned by my cousin, Pieter Bredell (also 7th generation Bredell).
