Alto, Cabernet Sauvignon 750ml 2015South Africa, Stellenbosch
The impressive Alto Cabernet Sauvignon, blends Old World elegance with the full-bodied, fruit-driven character typical of wines from the Golden Triangle. Named for its superior terroir, the Golden Triangle lies at the heart of Stellenbosch’s reputation for producing South Africa’s defining Cabernet Sauvignons. Harvested by hand and matured in French oak for 18 months, the Alto Cabernet Sauvignon is a perfect example of how this region is well deserving of its reputation as the ‘Kingdom of Cabernet’.
'Essence of Simonsberg Cabernet Sauvignon, unblended and expressive, this is a wonderfully pure, focused red showing leafy, savoury tannins, notes of mint and aromatic herbs and a core of bright blackcurrant fruit. 2019-25.' – Tim Atkin MW, SA Special Report 2018, 93/100
'Bouquet of dark intense plum red. Dark fruit with savoury notes. Cederwood and spice. Dark chocolate with a hint of minerals. The taste is deep, rich and intense with great balance between structure and finesse. Fine grained tannins. Dark fruit and savoury palate.' – Bertho van der Westhuizen, winemaker
This wine is made from grapes of north-facing vines, between 9 and 23 years old, that grow in decomposed granite soils and clay subsoil situated at altitudes of 135m to 500m above sea level. The vines on the higher slopes are fanned by the cooling maritime breezes from nearby False Bay. A seven-wire Perold trellising system is used, which yielded an average of 8 tons per hectare.
The grapes were harvested by hand at the end of March at 24º to 26º Balling. After destalking and crushing, the mash was fermented in stainless steel tanks at 25º to 27ºC, using the selected yeast culture. The juice was separated from the skins after 14 days. After malolactic fermentation, the wine was racked into first-, second- and third-fill French oak barrels and matured for 18 months.
